      目的 总结回顾近年来基于壳聚糖的油墨在食品领域的相关研究与进展。方法 通过查阅总结近几年相关文献及实验成果,综述含有有机色料和无机色料的壳聚糖基油墨,概述壳聚糖基油墨在食品领域的应用现状。结果 壳聚糖因其具有抗菌性、吸附性、可降解性、生物相容性、酸溶性、成膜性等特点,可以作为油墨连接料树脂分散有机或无机色料,制备多浓度、多粘度、耐酸碱性、适合多种印刷方式的壳聚糖基环保可降解油墨。结论 壳聚糖基油墨在食品、食品包装、食品智能设备的应用研究还处于起步阶段。由于传统油墨的有害成分逐渐引起人们关注,特别是针对食品安全领域,油墨的使用需要慎重考虑,因此,安全、环保、可降解油墨(如壳聚糖基油墨)的研究将成为大趋势。
英文摘要:
      The research and development of chitosan based ink in the food field is summarized and reviewed through investigating the relevant literature and experimental results in recent years. Because of its antibacterial, adsorption, degradability, biocompatibility, acid solubility and film-forming ability, chitosan can be used as ink binder resin to disperse organic or inorganic pigments to prepare environmentally-friendly chitosan based ink. This kind of ink possesses characteristics including multi concentration, multi viscosity, acid & alkali resistance and suitability for a variety of printing methods. The application of chitosan based ink in food, food packaging and food related smart devices is still in its infancy. However, the harmful components of traditional ink have gradually attracted people's attention, especially in the terms of food safety. Therefore, the research of safe, environmentally-friendly, and degradable ink (like chitosan based ink) will become a major trend.
