      目的 为了延长双孢菇的保质期、 减少腐烂损失做相关实验研究。方法 采用真空预冷技术对双孢菇进行保鲜实验研究。结果 经不同真空压力预冷处理后的双孢菇, 其失重率、 硬度与对照组相比差异显著, 特别是经1 kPa真空预冷处理的双孢菇质量损失和硬度减少最低。随着预冷终温的降低,双孢菇的质量损失和硬度下降减缓, 经真空预冷终温 5 ℃处理的双孢菇质量、 硬度、 色差变化率最低。结论 经真空预冷处理的双孢菇在贮藏期间各指标明显优于对照组, 真空预冷技术能有效延长双孢菇的贮藏期。
英文摘要:
      In order to extend the shelf life and reduce rot of Agaricus bisporus, vacuum cooling and storage experiment for Agaricus bisporus were studied. Our results found that the loss weight rate and hardness of Agaricus bisporus by vacuum pre-cooling were better than that of the control groups during storage. Especially when the 1 kPa vacuum pre-cooling treatment was applied, resulting the minimum loss of the weight and hardness of Agaricus bisporus. With the decrease of cooling temperature, the decreasing of weight and hardness of Agaricus bisporus were reduced. With the 5 ℃ vacuum cooling treatment, the hardness, color and weight loss of Agaricus bisporus changes were the smallest. The quality of Agaricus bisporus with pre-treatment of vacuum pre-cooling is better than the control group during storage period. Vacuum pre-cooling technology can effectively extend the storage period of Agaricus bisporus.
